Roast Pork Tenderloin with Apple Cider Dijon Pan Sauce Déjà Vu to You Too

Ive used pork tenderloin in several video recipes on the site, and I always say the same things; easy to cook, tender, tasty, fast, etc. So, Im not going to bore you with why I love this cut of pork again. Im sure you dont want to hear how it needs almost no trimming, and cooks in only about 20 minutes again. No need to explain about the delicious pan sauces that can be made once it comes out of the oven, like this amazing Apple Dijon Sauce. Deglazing, reducing, finishing with butter…youve probably been there and done that.

What I will say however is that if your planning on cooking a holiday dinner, and youre not the most confident cook in the world, you should consider this recipe. Its really hard to screw up, and believe me Ive tried. Of course, thats assuming that by now Ive convinced you to get a meat thermometer, and you use it on this pork to get a perfect internal temperature for maximum succulence. Teaser Alert: I also will be posting a great, health cauliflower and potato side dish video soon that will be perfect with this roast pork and sauce. Enjoy!

THREE LAYER APPLE CRISP

Sweet, spiced, apples are tucked between two layers of oats, nuts and brown sugar. This is a classic apple crisp with a twist.

 1 cup all purpose flour
1 cup rolled oats
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg (see note)

¾ cup packed brown sugar
¾ cup cold butter
4 cups sliced and peeled apples
1 cup pecans chopped
.
In a large bowl, mix the flour, oatmeal, cinnamon, nutmeg and brown sugar. Cut in the cold butter until mixture looks crumbly. Stir in chopped nuts.
.
Spread half of this mixture into the bottom of a 10" pie plate and pack it down.
.
In a heavy pan, saute the apple slices in a tablespoon of butter, ½ cup brown sugar and ¼ teaspoon of cinnamon and a pinch of nutmeg, JUST UNTIL THE APPLES BEGIN TO SOFTEN. Place this layer on top of the crumb crust.

Top the apples with the rest of the reserved oat mixture and gently pat down. Bake in 375 degree preheated oven for 35 to 40 minutes. Serve with ice cream.

NOTE: I have never been a big fan of nutmeg until I recently started using freshly grated nutmeg seed. It is an entirely different taste than you get in the pre-ground nutmeg. A jar of seeds has a LONG shelf life and they really make a huge difference in baked goods.

Swedish Apple Pie

Its Dinner Divas time and once again it was my turn to make dessert.  The theme was Swedish food which is not the easiest to work with but I was able to find a Swedish dessert thanks to Stacey Snacks!  This was easy enough that I was able to make it and not worry too much about it being perfect.  It is a very simple rustic dish that everyone seemed pleased with....even though I forgot to peel the apples! Talk about rustic!  If you ever find yourself with an abundance of apples youve got to give Swedish Apple Pie a try.

A Classic American Apple Pie – Warning This Video Recipe is Almost All Filler

I really wanted to do a from-scratch apple pie video, complete with my Aunt Angelas famous homemade crust, but with my chicken wing video blowing up all over the web, and the Foodbuzz Blogger Festival this weekend demanding my time and attention, I took the easy way out (Im looking at you Sandra Lee), and used a pre-made pie dough.

Besides, if youre not an experienced pie baker (and lets face it, youre
not), theres nothing wrong with a little ready-to-use dough, as long as its filled with this fantastic apple pie filling.

What will strike you about this filling is just how
few ingredients go in it. Sliced apples baked with sugar taste really, really good, and we dont want to mess with that too much. For me, a little pinch of nutmeg and some cinnamon is all this timeless combination needs.

The other key here, compliments of my mother Pauline, is to use multiple types of apples. There are subtle differences in flavor and texture with the wide variety of baking apples (basically defined as anything except Red Delicious). This is a classic case of the whole being greater than the sum of the parts.

You can see the apple blend I used in the ingredient list below, but there are an endless number of combinations (not literally! I know how you math people are – you were so going to send me an email, werent you?)

Anyway, I hope you give this delicious apple pie filling a try, and if you were going to shock the world and bake a homemade pie for dessert for one of the upcoming holiday meals, this would be a great choice. Enjoy!

Ingredients:
6-8 baking apples (depending on size) I used 2 Granny Smith, 2 Braeburn, 2 Fuji
1/2 lemon, juiced
1 cup white sugar
3 tbsp cornstarch
1/8 tsp nutmeg
1/2 tsp cinnamon
very tiny pinch of salt
2 tbsp butter
1 egg, beaten
ready to use pie dough (I used Pillsbury)
