PEACH PIE and a QUESTION ABOUT CURRY POWDER
Our fall is revving up...the Alaska State Fair is underway and it is the absolute end of our growing season (we will have frost in less than two weeks). What does all that mean? It is finally cool enough to bake to my hearts content, which makes me a happy camper.
Hubby is the pie eater at our house and he likes thinner pies as opposed to deep dish pies, so I started baking his pies in a two piece tart pan. At first I resisted, but soon discovered that the tart pan not only makes a prettier pie, but they are also much easier to serve (no pie plate corners to maneuver around when your cutting that first piece).
CRUST
2 and 1/2 cups all purpose flour
1/2 teaspoon salt
1 cup ice cold butter
6-8 tablespoons ice water
Place the flour, salt and cold butter (cubed) into a food processor and pulse a few times until you get fine crumbs. Pour this mixture into a bowl and add 6 tablespoons of ice water. If the dough is too dry, add more ice water (1
NOTE: When I bake a pie in a standard pie plate (especially glass pie plates) I spray the plate with just a little cooking spray. This helps when it comes time to remove the pie, especially if some of the juices have found their way under the crust. This is not necessary with the two piece tart pan.
NOTE: Mix dough as quickly as possible (when using your hands) so that you dont warm up the butter.
NOTE: When you paint the inside bottom crust with the egg wash, be careful not to get too much of it up by the top edge of the tart pan (or the crust will get glued to the pan).
NOTE: Put a cookie sheet under your pie pan while it is in the oven just in case you have spill overs.

tablespoon at a time) until the dough hangs together in a ball. Divide your dough in to two pieces (top crust + bottom crust). Wrap one piece in plastic and put it in the fridge. Dust your counter with flour and roll out the other piece of dough to an 1/8" thickness. Place it in the pie plate (or tart pan). Do not stretch the dough. Place this bottom crust in the fridge while you make the fruit filling.
PEACH FILLING
5 cups of fresh peaches (peeled and sliced)
1/2 cup white sugar
1/2 cup brown sugar
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 cup all purpose flour
1/4 teaspoon salt
2 tablespoons butter
Mix the sugars, cinnamon, flour, salt and peaches (gently) until everything is moistened. Stir in vanilla extract. Remove bottom crust from the fridge and "paint" the INSIDE surface of it with egg wash (1 egg mixed with 1 tablespoon water ). This will help keep the bottom crust from getting soggy while baking. Pour the fruit filling into the bottom crust and dot the filling with small pinches of cold butter.
Roll out the top crust...place it on top of the fruit and pinch the edges (if you are using a pie plate) or run your rolling pin across the edges if you are using a tart pan. Cut a vent hole in the top pie crust. Brush egg wash over the surface of the pie and sprinkle with white sugar. Bake in a PREHEATED 450 oven for 15 minutes, then lower the heat to 350 for 30 more minutes. Remove pie from oven and cool at least 3 hours before cutting.

CURRY POWDER QUESTION: I have been looking at some recipes that use curry powder. I have zero experience with curry powder and a quick check on the Internet confused me even more. I guess there are many kinds of curry powders (hot, sweet, etc.). What should I watch for when purchasing curry powder. I want to try a chicken salad recipe that just says " 1/2 tsp. curry powder"...what do I buy? Any suggestions or helpful hints would be appreciated.

SANDRAS AWESOME SKILLET POTATO AND ONION PIE
![]() |
| You cannot go wrong with this side or main dish... |
Prep: 5 mins. |
Cook: About 20 mins.
Posted by Sandra
INGREDIENTS
2 tablespoons unsalted butter
2 tablespoons vegetable oil
2 large russet potatoes, peeled, and grated
½ onion, finely julienned
1 clove of garlic, minced
Pinch of red pepper flakes
Fine grain kosher salt and freshly ground pepper, to taste
2 tablespoons freshly chopped parsley leaves
METHOD
In a nonstick 10” saute pan, heat the vegetable oil and butter over medium-high heat. Add the onions and saute until translucent, and add garlic and red pepper flakes and saute for 30 seconds.
Meanwhile, grate the potatoes, squeeze excess moisture and add them to a medium bowl, and pour the skillet mixture over the potatoes, then gently toss to combine. Season with kosher salt and ground pepper, to taste, and add the chopped parsley and fold to combine.
Press grated potato mixture into heated nonstick skillet with back of spatula. Let cook undisturbed over medium heat, until crisp on bottom for about 8 to 10 minutes. Gently flip onto a plate, and then slide other side into nonstick skillet to finish cooking undisturbed for another 8 to 10 minutes.
To serve, slide onto a cutting board, and slice into four wedges. – Enjoy!

| With sunny-side up eggs... |
~~~~~~~~~~~~
Tip: This is excellent with eggs for breakfast, or a nice accompaniment with any meat, poultry, etc.
Note: During the last 5 minutes, I like to make four indentations, and add one egg into each, then loosely tent skillet with foil -- This way your potatoes and eggs are perfectly cooked all in one skillet (See photo to the right).
CHOCOLATE MARSHMALLOW BROWNIE PIE
Ive noticed a trend on my birthday (which is today); it seems I always treat myself to something CHOCOLATE!! Todays birthday post is ULTRA-chocolate (and delicious).
It starts with a rich brownie layer that you top with miniature marshmallows while it is still piping hot out of the oven. Then it is topped with a rich chocolate glaze and sprinkled with lots of toasted sliced almonds. It was heavenly!!
BROWNIE LAYER
In a small bowl whisk the following ingredients together:
3/4 cup all purpose flour
1 cup sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
In a different bowl, beat the following together:
1/2 cup butter melted
2 large eggs
2 teaspoons vanilla
Add the wet ingredients to the dry ingredients and mix until smooth.
Place batter in a greased 9" round pan (spring form pan works the best) and bake in a 350°F oven for 25-30 minutes or until toothpick tests clean (my electric oven took 25 minutes).
Remove from oven (and turn oven off). Top HOT cake with miniature marshmallows (I used about 4 large handfuls) and put it back in the hot oven for 2-3 minutes or until marshmallows have puffed up a little. Remove from oven.
FUDGE FROSTING
6 tablespoons melted butter
6 tablespoons BOILING water
6 tablespoons dry cocoa powder
2 cups powdered sugar
1 teaspoon vanilla extract
Whisk until smooth. Gently pour (evenly) over the warm marshmallows and then sprinkle with TOASTED sliced almonds (nuts optional). If you dont like nuts, colored sprinkles look festive too.
Let everything cool off a little, then put it in the fridge for about an hour to "set" the chocolate frosting. Bring the cake back to room temperature before serving.
NOTE: You can bake this in ANY greased 9" cake pan, but a two piece spring form pan will allow you to remove the cake a little easier. If you use a 2 piece pan, make sure you put a cookie sheet under the pan.
SANDRAS HOMEMADE PIE CRUST
![]() |
| A must-have pie crust recipe when baking your favorite fruit, berry, and cream pies, or crisps, and so on... |
Chill: 4 hrs.
Bake: 10 - 12 mins.
Posted by Sandra
INGREDIENTS
Yields: (One 10" pie crust)
1-1/4 cups all purpose flour
1 stick unsalted butter, cold and cut into pieces
1/4 teaspoon salt
1/4 cup ice water (more or less, depending on your humidity)
Yields: (Two 10" pie crusts)
2-1/2 cups all-purpose flour
2 sticks butter, cold and cut into pieces
1/2 teaspoon salt
1/2 cup ice water (more or less, depending on your humidity)
METHOD
Add flour to a food processor, and then add the butter pieces. Pulse a few times until the mixture resembles small peas. Add the salt and a couple of teaspoons of water through the tube at a time while pulsing until the mixture forms chunky-type balls. Remove from food processor and place onto a lightly dusted flour surface, and form into ball, and then press flat. Cover with plastic wrap and chill at least 4 hrs. or overnight. Remove from refrigerator, and dough let return to room temperature for 30 minutes before rolling out crust(s).
For making one-crust cream pies with fully pre-baked crusts, line the pie plate, and flute the edges of crust, and then carefully pierce bottom and sides with a fork. Gently place tin foil over inside of crust, and place beans over foil to weight bottom of crust down while baking. Bake at 425 degrees for 10 to 12 minutes. Remove from oven and let cool before adding cream filling. (Note: You can save the beans in a sealed jar for the same use again, but not for cooking.)
For making two-crust pies. Line the bottom of pie plate with one crust, and leave 1/2 inch around outer edge perameter after fitting in place. Add the fruit, berry, etc. filling. Brush the outer bottom edge of crust with egg wash (1/2 egg and 1/2 water, beaten) so the top crust adheres to it. Add the top crust and tuck under edges to seal with bottom crust edge. Flute the edges by pinching with fingers, or use fork tines. Brush only inside of top crust with egg wash mixture (not edges), and cut a small hole in the center to form a steam vent, including a few decorative slits surrounding it. Most all double-crust pies should be placed on a foil-lined baking sheet, and cover edges of crust with foil prior to baking at 450 for 15 minutes. You should then turn down your oven to 350, and then continue baking for the time allocated per your recipe.
A Classic American Apple Pie – Warning This Video Recipe is Almost All Filler
Besides, if youre not an experienced pie baker (and lets face it, youre not), theres nothing wrong with a little ready-to-use dough, as long as its filled with this fantastic apple pie filling.
What will strike you about this filling is just how few ingredients go in it. Sliced apples baked with sugar taste really, really good, and we dont want to mess with that too much. For me, a little pinch of nutmeg and some cinnamon is all this timeless combination needs.
You can see the apple blend I used in the ingredient list below, but there are an endless number of combinations (not literally! I know how you math people are – you were so going to send me an email, werent you?)
Anyway, I hope you give this delicious apple pie filling a try, and if you were going to shock the world and bake a homemade pie for dessert for one of the upcoming holiday meals, this would be a great choice. Enjoy!
Ingredients:
6-8 baking apples (depending on size) I used 2 Granny Smith, 2 Braeburn, 2 Fuji
1/2 lemon, juiced
1 cup white sugar
3 tbsp cornstarch
1/8 tsp nutmeg
1/2 tsp cinnamon
very tiny pinch of salt
2 tbsp butter
1 egg, beaten
ready to use pie dough (I used Pillsbury)
A Vegetarian Shepherds Pie is Called a What
This photo is from a video shoot I just did for About.com on "How to Make Shepherds Pie." I will post the recipe here as soon as it goes "live" so you can make a pan for your flock.Im also brainstorming a video recipe for vegetarian Shepherds pie, based on caramelized mushrooms.
Although I know a few people that would be perfect for the challenge of herding vegetables, "Vegetarian Shepherds Pie" is a pretty silly name for obvious reasons.
So, Id like a little help coming up with a name. Here are a few ideas I have so far: Foragers Pie, Gardeners Pie, Vegetable-Murders Pie, and Workers Collective Pie. Let me know if any of those appeal to you, or give me your own ideas. Thanks!
