A Jammy Weekend Recipes for Strawberry Balsamic Fig Vanilla Black Pepper Jam




A little cafe surrounded by a kitchen garden - windows with fluttering lace curtains - a big oven on one side - cinnamon, yeast, vanilla scents in the air - sounds of happy chatter - the aroma of fresh coffee brewing - people waiting in anticipation of a simple good time - a cup of good coffee or choice of tea with a scone or a muffin topped with some homemade jam - A girl can day dream right?

On Thursday, I ordered more fruit than I usually do for a week, especially strawberry and figs, with the intention of making jam. Im not much of a jam sandwich person. Give me a Mumbai style coriander-mint chutney and cucumber sandwich any day. But when you have a little boy at home wholl say Im hungry at the most unpredictable times of the day, it is good to have a loaf of bread and some spreads handy to make a snack in 2 minutes. He likes my Chocolate coconut Peanut Butter - well, I like it a lot myself and each batch gets over in a matter of 2-3 days. So I decided to make some jams anyway. What better way to preserve the goodness of seasonal fresh fruit for a couple more months?

Theres a lot more Id like to write about on jamming but the weekend chores beckon and I promised a few people that Ill be sharing the recipe on my blog before the end of the weekend, so here are the recipes for the two jams.
 If you always wondered what the difference was between jelly, jam and preserve, read this. 
Id say my recipes are in between a jam and preserve, because while they do have a chunky texture, it is not that chunky because the fruit was fairly finely chopped to begin with. Contrary to popular belief that jam making is the job of old matronly housewives who wish to slave in the kitchen all day and night, these jams dont take more than 30-45 minutes each, including fruit chopping time, especially because were making only a small quantity at a time. Also, in both these jams, we dont need any added pectin because both fruits are full of seeds inside them which are a natural source of pectin. As for fig jam, most recipes from international websites dont ask for the fruit to be peeled, but Indian figs are very thick skinned, therefore better off peeled.

Strawberry Balsamic Preserve
Recipe adapted from Epicurious



Ingredients
750 grams strawberries (washed, patted dry and tops removed- I bought 1 kg and this was what I got after eating a few and removing the tops)
3 tbsp balsamic vinegar
3 tbsp water
1 cup sugar
1/2 tsp butter

Directions

  1. Finely chop the strawberries-youll get roughly 2 1/2 cups of chopped fruit
  2. In a heavy bottomed steel or anodised pan, put all the ingredients together, on a medium flame, bring this to a simmer.
  3. The butter prevents the mixture from foaming and splattering too much. In fact, mine didnt splatter at all. 
  4. Simmer for 20-25 minutes, until the mixture is thick and translucent. Keep stirring off and on. Dont worry if its still a bit flowy and it will thicken further on cooling. So, switch off before the jam turns thick.
  5. Remove pan from heat and cool thoroughly.
  6. Meanwhile place two empty clean and dry glass jam jars  bottles without their lids in the microwave for one minute. This is to quick sterilise the bottles.
  7. Once cooled to room temperature, spoon the jams into the two jars. Id say I got roughly two jars of 300-350 grams each.
  8. Close them tight and keep in fridge. Use within a month.


Recipe for Fig-Vanilla-Black Pepper Preserve
Adapted from Taste





Ingredients
Roughly 1 kg fresh figs
1 cup sugar
half a vanilla pod (or use a cinnamon stick + 1/2 tsp ground cinnamon)
1 tsp coarsely ground black pepper
3 tbsp apple cider vinegar or lemon juice or balsamic vinegar
1/2 tsp butter

Directions

  1. Wash, dry and remove stems of figs. Peel and chop finely.
  2. Slice the vanilla pod and scrape the seeds with the end of the knife, add this to the chopped figs. 
  3. In a large bowl, add all the ingredients, including the scraped vanilla pod, cover and keep overnight. [at this stage you could either keep the bowl of ingredients covered in the refrigerator overnight and proceed with jam making in the morning or proceed with the process immediately. I left it in the fridge overnight] 
  4. After the mixture has sat in the fridge overnight, transfer them to a heavy bottomed steel pan or anodized pan, bring to a simmer on medium flame.
  5. Keep stirring off and on so that the sugar does not stick to the bottom and burn.
  6. In around 20 minutes, the mixture will start to thicken. Remove from flame. Cool thoroughly. 
  7. Meanwhile place two empty clean and dry glass jam jars  bottles without their lids in the microwave for one minute. This is to quick sterilise the bottles.

Christmas recipes – get 4 delicious recipes for this Christmas

1. Christmas pickles

Ingredients:

-10 Pickles, thinly sliced
-1 Cup green bell pepper
-Paprika 1 cup
-1 / 2 Cup onion, diced
-1 Cup vinegar
-2 Cups white sugar
-1 Tbsp mustard seeds
-1 Tablespoon dill seeds
-1 Tablespoon salt

Directions:

-Wärme vinegar and sugar until it comes to the boil. Dont Cook.
-Cool and pour over pickles, pepper and onions.

Keep without sealing for months in the refrigerator.

2. Holiday dip

Ingredients:

-1 Cup mayonnaise
-1 (8 oz) pkg of sour cream.
-1 (8 oz) water chestnuts can drained, finely chopped
-2 Tablespoons chopped pimiento
-1 Tbsp sliced onions
-2 Teaspoons of beef stock flavor
-1 / 2 Teaspoons Worcestershire sauce
-1 / 4 Teaspoon garlic powder
-Fresh vegetables and chips

Directions:

-In medium bowl, combine all ingredients except vegetables and chips; Mix well.
-Cover.
-Chill.
You serve before the-Rühren.
-If you garnish with additional spring onions.

Serve with vegetables and chips.

3. Clam dip

Ingredients:

-1 (10 1/2 oz) minced clams can
-6 Ounces of cream cheese
-2 Teaspoons of grated onion
-1 / 4 Teaspoon hot pepper sauce
-1 / 8 Teaspoon Worcestershire sauce
-1 / 4 Teaspoons lemon juice
-1 / 2 Tablespoons clam juice (reserved juice canned bivalve molluscs)

Directions:

-Drain canned clams and reserve juice.
-Kombinieren shells with remaining ingredients and mix thoroughly.
-Chill.

Serve with crackers or bread round.

4. Christmas crab dip

Ingredients:

-1 pkg. (8 Ounces) of cream cheese
Force sharp old English jug 1 cheese spread
-1 Tablespoons half & half
-1 Tbsp chopped chives
-Dash Worcestershire sauce
-Knoblauch salt to taste
-360 ml Crayfish (fresh, frozen or canned)

Directions:

Merge the first six ingredients in the top of a water bath or chafing dish over medium heat.
-If the ingredients are melted and mixed well add the crab, reduce the heat to just warm.

Serve with crackers. Great for a party!

Old Recipes












I love old cookery books and cuttings. Ive been collecting recipes since I was about 14 years old. But these ones come from my DHs grandmother who cut out and collected all sorts of recipes and household tips and hints. This page is from a book called Household Cookery and Laundry Work by Mrs Black.


Aunt Kates Ration Recipe Book was given free with the Peoples Friend, we have quite a lot of those free books. I keep a lot of the free books that come with BBC Good Food so I guess nothing changes.












Mary Lous Plain and Fancy Baking Book is probably my favourite, its from the Weekly Welcome, October 17th, 1931 and i have Mary Lous Candy Book too.

30 years on and my grandmother was reading Elizabeth Davids French country cooking, this copy is from 1963.

Random Recipes Beetroot and Black Cumin Soup





For the New Year,  Dom at Belleau Kitchen has invited us to cook from a new cookbook.  Now I only got one cookbook for Christmas and it features nothing but...CHOCOLATE!  However, the house is still full of chocs and biscuits, the fridge still has two jars of homemade mincemeat and we have only just finished the Christmas cake, so I really couldnt face making any more sweet things.


So instead I turned to the books I won from Ren Behan at Fabulicious Food, I got all three of the Moro cookbooks by Sam and Sam Clark.  I randomly chose the original Moro book from the three.  Then I opened the book in a random sort of way and found that I had chosen  


Beetroot Soup with Black Cumin
4tbsp olive oil
1/2 large Spanish onion,thinly sliced
2 garlic cloves, thinly sliced
1 rounded tsp black cumin or normal cumin seeds
750g raw beetroot, peeled and finely diced
1 large potato, finely diced
1.25 litres cold water
3 tbsp good quality red wine vinegar
1 small bunch fresh flat-leaf parsley, roughly chopped
100g home-made or Greek yoghurt, thinned iwht a little milk an seasoned with 1 garlic clove crushed to a paste with sea salt and black pepper

Heat the oil in a large saucepan over a medium heat.  Add the onion and a pinch of salt.  Cook for 10 mintues, stirring occasionally, until the onion begins to colour.  Now add the garlic and cumin and cook for 2 more minutes to release their flavour, followed by the beetroot and potato.  Pour in the water, bring to a gentle simmer and cook until soft, about 15 minutes (I dont think I chopped mine small enough as it took much longer to soften).  Place the vegetables and the cooking liquid in a blender or food processor and blend until just smooth.  You may need to do this in two stages. Return to the pan, add the vinegar, half the parsely and salt and pepper to taste, bearing in mind you may need more salt than you think to blance out the acidity of the vinegar.  Servie with a little yoghurt on top, the rest of the parsley and an extra drizzle of olive oil.




The soup was very easy to make and looks incredible, it has an interesting sweet and sour taste with the combination of the sweet beetroot and the red wine vinegar.  I was a bit disappointed that I couldnt taste the cumin and I did actually use black cumin but I cant say it was obvious.  I would make it again but might increase the amount of cumin, or maybe use some ground as well as cumin seeds.

1 Hour or less stove white rice recipes

As a busy mother, grandmother and wife I not in my kitchen every evening prepare healthy meals for my family spend hours. To solve this problem, I see the less than an hour from start to end and those to take advantage of the healthy fresh ingredients for recipe- s.

The following white rice recipehealthy dishes and are less than 45 minutes to make.

Time-saving tips: If you want to reduce preparation time, you can all your vegetables of night hacking above and place them in sealed containers in your refrigerator. You can cook your white rice the day before, drain away the water and in the fridge until you want to use it.

Lemon rice pilaf recipe

1 Cup celery, chopped

1 Cup onion, chopped

2 Tablespoons light butter or margarine

Rice 3 cups white fully cooked,

1 Tablespoon lemon rind, finely grated

3 / 4 Teaspoon salt

1 / 2 Teaspoon of ground black pepper

Cook rice according to instructions on the packaging and drain. Cook your celery and onions in butter in a large pan until soft. Stir into your rice, grated lemon rind, salt and pepper. Next Simmern over low heat for 2 to 3 minutes or until their fully heated through. Serve immediately.

Spanish rice recipe

1 Tablespoon vegetable oil

1/2 Cup uncooked white rice

1 can condensed Italian tomato soup

1 Cup water

1 Bay leaf

1 / 8 Teaspoon of ground black pepper

Pinch of red pepper sauce

Add your vegetable oil in a large pan and turn your burner on medium-high heat. Stir in the rice and until browned, stirring often with a nonstick silicone spatula. As soon as it has browned, soup, water, bay leaf, black pepper and a pinch of hot pepper sauce is the cans. Bring heat so that the mixture Cook comes to the quick. Reduce heat to low and cover the pot. Simmer on low for 20 minutes or until rice is soft is. Remove bay leaf and serve immediately.

Not even see the word "Dinner" and check out some of the meals you even that healthy me erscheinen.Die next site that I was tried actually better, something that even though I had a lot of recipe s that asked me to find to scan.

Veg Pasta Italiano Red Tomato Pasta Domions India style Restaurant Pasta Recipes


This is Domions India style pasta recipe. Bow tie pasta tossed with olive oil, aromatic italian herbs, exotic veggie and with generous amount of flavourful Italian red tomato sauce. For non vegetarian pasta Italiano red, top with marinated grilled chicken.

Tomato Pasta
Ingredients
Bow tie or Penne Pasta cooked- 2 cups
Home made easy tomato sauce for pasta---click for recipe- 1 cup
Chopped olives- 1/4 cup
American sweet corn- 1/4 cup
Onion thickly sliced- 1/4 cup( optional)
Shredded cheddar cheese- 1/2 cup
Parmesan cheese- 1/4 cup( optional)
Olive oil- 2 tbsp
Dried oregano( or parsely, basil)- 1 tsp
Restaurant Italian Pasta
Method
Boil pasta with enough salt until aldente( firm) as per box instructions.
Heat oilve oil in a sauce pan on low heat, add cooked pasta, oregano and home made tomato sauce, sweet corn, chopped olives, Parmesan cheese, cheddar cheese to the pan. Toss well and serve.
Or
Heat oilve oil in a sauce pan on low heat, add cooked pasta and oregano, toss well and place on plate. Pour generous amount of home made tomato sauce on pasta. Garnish with sliced olives, sweet corn and generous cheese.

It's a butter and wheat flour gorge fest with danger at every turn. The gruesome gut-twisting threat of thirty-six hours chugging Pepto Bismol is poised to strike on every holiday decorated plate- jovial forkfuls of tradition and conviviality aside.

It can be a nightmare, Darling.


If you're lucky, your family is tuned in to the ins and outs of celiac disease and gluten sensitivity, and they are well aware of the angst and anxiety food centric holidays can trigger for those of us who need to be vigilant about each and every spoonful of food that enters our quirky gluten-free universe. 

If you are blessed, they are thoughtful and well schooled in where gluten might lurk (turkey broth, marinades, gravy, seasoning packets, spice blends, traditional stuffing, cornbread mixes, crackers and pie crusts). And they don't ask questions like, You can eat "whole" wheat crackers, right? with the emphasis on the word whole as if somehow, the word itself makes the wheat magically safe for gluten sensitive folks to consume (it doesn't). They don't indulge in meta messages and all that spooky passive-aggressive weirdness. They won't sigh when you politely decline a slice of Aunt Ethel's pecan pie and say, Why don't you just eat the crust? They won't hold up a pitcher of turkey gravy and whisper, A little bit won't kill you.

Or my own personal favorite, Oh, go ahead... I have food allergies and I cheat.

Right.

If these persuasions are foreign to you, then you, Dear Reader, have much to be thankful for this holiday season. You are blessed with a clan that gets you, loves you without judging you, and honestly cares about every morsel that enters your fragile cellular universe.

The attentive Moms and Dads, compassionate Aunts and Uncles, smart-as-a-whip Grandmas and Bubbes and best buds who believe that if food is love, Thanksgiving should be fun and worry-free and delicious.
