Mexican Caramba


Ingredients
  • Fish fillet 300 gm
  • Corn 1 cup
  • Onion chopped 1
  • Ginger chopped 1 piece
  • Green Capsicum chopped 1
  • Red capsicum chopped 1
  • Zucchini 1 small
  • Boiled tomatoes 3
  • Garlic chopped 3 cloves
  • Cheddar cheese ½ cup
  • Crushed black pepper 1 tsp
  • Coriander leaves chopped 2 tbsp
  • Lemon juice 2 tbsp
  • Chili garlic sauce 2 tbsp
  • Butter 2 tbsp
  • Salt to taste
Method
  • Slightly boil 300 gm fish fillets and keep aside.Heat 2 tbsp butter in a wok, add 1 piece of chopped ginger, 3 cloves of garlic, 1 chopped onion, 1 chopped green capsicum, 1 chopped red capsicum, 1 chopped zucchini, 3 boiled chopped tomatoes, 1 cup corn, 2 tbsp lemon juice and cook for 2 – 3 minutes.
  • Then add 2 tbsp chili garlic sauce and salt to taste.Simmer for 4 – 5 minutes.Now add boiled fish and mix well.Lastly add ½ cup grated cheddar cheese and 2 tbsp chopped coriander leaves. Mix well and serve.
