Cranberry Orange Sauce

I dont know how, but Thanksgiving is next week.  It really snuck up on me this year, and I completely forgot about some recipes I tried last year but never posted.  Well...heres one of them!  I made cranberry sauce from scratch last year and it was really tasty!  I was amazed at how easy it was.  It can be made a couple days in advance and it tastes great on a leftover turkey sandwich too.  Yum!


Cranberry Orange Sauce

1 c. white sugar
1/2 c. water
1/2 c. freshly squeezed orange juice
4 c. fresh or frozen cranberries
1 T. orange zest

Rinse cranberries with cold water.  In a medium saucepan, add sugar, water, and orange juice.  Stir until sugar dissolves.  Bring to a boil and add cranberries and orange zest.  Return to a boil and reduce heat to medium low.  Cook until cranberries start to burst, about 10 minutes.

Remove from heat and allow to cool to room temperature.  Pour sauce into serving dish and chill in the refrigerator until serving time.

How to make Butter Chicken/Murgh Makhani

Butter chicken or murgh makhani originates from the Mughal Empire in India and is eaten through out the world today.

There are different variations of butter chicken but the basic principles of cooking butter chicken are marinating the chicken in yogurt and spices, then cooking the chicken in butter and adding the cooked chicken to a smooth aromatic tomato based sauce.

Chefs tasty butter chicken recipe is very aromatic and easy to prepare, there are a lot of ingredients used in this recipe but do not worry, it is simply a matter of marinating the chicken, cooking a sauce then refrigerating both, then after a few hours the procedure of cooking the butter chicken is easy because the two main parts of the recipe have already been done.

Cream can be added to the dish at the end of cooking, Chef adds evaporated milk instead, the option is yours.

Ingredients for butter chicken (murgh makhani)

For marinade

2-3 Chicken breasts (diced)
1 cup Yogurt
1/4 tsp Ground cardamom
1/4 tsp Garam masala
1 + 1/2 tsp Lemon juice
1/2 tsp Paprika
1 Tbsp Tomato puree
1 tsp Garlic puree
1 large tsp Fresh ginger (grated)

For the butter chicken sauce

1 large Onion (diced)
Oil
3-4 inch Fresh ginger (chopped)
4-5 large Garlic (chopped)
Handful dried methi leaves
Handful dried curry leaves
1 tsp Salt
1/4 tsp Ground Cloves
1 tsp Paprika
8-10 Whole green cardamoms (depends on size of pods)
1/2 tsp Cayenne pepper/ Chili powder
1/4 tsp Cinnamon
1 tsp Sugar
Sprinkle black pepper
1 + 1/2 cup Sieved tomatoes/ Passata (or push some canned tomatoes through a sieve)

To finish


3 Tbsp Butter
1/4 cup Evaporated milk or Cream


Chefs Note... If using canned tomatoes try to use quality tomatoes that are thick in consistency, if the canned tomatoes are runny a little (1 Tbsp) tomato puree may be added.

How to make Butter Chicken / Murgh Makhani




Place all of the marinade ingredients except the chicken into a small bowl and mix.


Place chicken in a separate dish that it will be marinaded in.




Pour the yogurt marinade over the chicken.



Cover all of the chicken pieces in the marinade.



Cover the dish and place into the fridge for a few hours.



Heat up a large frying pan and drizzle in some oil. Add the onions and cook the onions for 5 minutes or until the onions soften.



Add the garlic and ginger and cook for a few more minutes stirring often so that the garlic does not burn.



Add the rest of the ingredients for the sauce, stir well and simmer for a few minutes.



Pour into a blender and pulse into a paste.




Cover and place in the fridge for a few hours.



When you are ready to cook the butter chicken remove the tomato base from the fridge and put through a sieve into a pan.
This removes any little bits of cardamom shells and seeds that did not get blended in the food processor.

Pour the sauce into a small pan and gently heat on the lowest setting for 10-15 minutes stirring often. Do not boil the butter chicken sauce or else the spices will not be as aromatic and the tomatoes will burn, take your time.



In a large wok/pan add the butter on a medium/high heat.



Add the marinated chicken pieces.




Stir well and cook for a 5 minutes.




Pour the warmed up tomato base into the pan with the butter chicken.



Stir well, cover and simmer for 10 minutes or until chicken is cooked.
Stir often so that the chicken cooks evenly.



Pour in the evaporated milk or cream, cook for another 2 minutes.




Serve with basmati rice, roti, naan bread.

Chicken Kurma

This is an south Indian Chicken Korma recipe for parotta, idli, dosa and idiyappam

Chicken Kurma

Ingredients
Chicken pieces- 500 gms
Onion medium minced- 2 nos
Tomato medium finely chopped- 1 no
Ginger and Garlic paste- 2 tbsp
Red chilli powder- 2 tsp
Coriander powder- 2 tbsp
Turmeric powder- 1/4 tsp
Cumin powder- 2 tsp
Fennel powder- 2 tsp
Salt to taste
Oil required
Water required
Curry and Coriander leaves
Cinnamon- 1" piece
Cloves- 4 no
Cardamom- 2 nos

Masala to grind
Coconut shredded- 1/4 cup
Cashew nuts- 6 nos
Roasted Kuskus/ Poppy seeds- 2 tbsp
Kozhi Kurma
Method
Heat oil in a pan, when oil is hot add cinnamon, cloves, cardamom and fry for few secs. Next add minced onion and curry leaves, fry till onions turn pink. Add ginger and garlic paste fry till raw smell leaves.
Now add the chicken pieces and fry till chicken pieces turns pale. Add tomatoes to the chicken and cook till tomatoes are mashed. Add red chilli powder, turmeric powder, coriander powder, cumin powder, fennel powder and salt to the chicken and saute for few secs. Now add the ground masala paste and required water. Bring the gravy to boil and cook the chicken on low heat until chicken is tender and gravy is slightly thickens. Garnish Chicken Korma with coriander leaves and serve along with parota, idli, dosa, idiyappam etc.

CRISPY CHICKEN NUGGETS

½ kg chicken mince
2 tablespoons tomato sauce / ketchup
1 tablespoon lemon / lime juice
2 tablespoon chillie garlic sauce
1 teaspoon pepper powder
salt to taste
4 tablespoons plain flour / maida
3 tablespoons corn flour
oil for frying
½ cup milk
1 Egg Beaten
4 tablespoons bread crumbs
Mix the chicken mince, tomato ketchup / sauce, lemon / lime juice, chillie garlic sauce, pepper powder and a little salt. Make a thick batter with the flour / maida, corn flour, salt and milk. Form the chicken mince into square nuggets. Dip the nuggets one by one in the batter and roll in the bread crumbs. Heat oil in a pan and shallow fry the chicken nuggets till golden brown and crispy on both sides. Serve with either tomato ketchup or chillie sauce.

Steak Pizzaiola – Better Late Summer Than Never

I’ve been wanting to post this steak pizzaiola recipe for a while now, but was bidding my time, waiting for those perfectly ripe late-summer tomatoes before trying it. 

Of course, those have been available around here for many weeks, but every time I’d buy some, I’d quickly use them on sandwiches, salads, etc., before getting to make this great dish. Hey, a BTL can be very seductive.

Well, I’m happy to announce I was finally able control my will power, and saved enough for a beautiful bowl of concasse, which is the soul of this superb sauce. Speaking of concasse – which is nothing more than a fancy French culinary term for peeled, seeded, and chopped tomatoes – I’ll be posting a video for how to do those on Tuesday, so stay tuned.

Like virtually every recipe we post, there are hundreds of ways to make pizzaiola; from versions featuring slowly braised tough cuts, like chuck or rump roast, to quickly seared tenderloin medallions, like I used here. The one thing most people agree on is that you should, if at all possible, use really fresh, very sweet, vine-ripened tomatoes.

Having said that, this would work with some finely chopped, canned San Marzano tomatoes in a pinch. I also encourage the use of both dried and fresh oregano, which I think work great together in this quick sauce. Anyway, I really hope you have access to some beautiful tomatoes, and that you give this steak pizzaiola recipe a try soon. Enjoy!


Ingredients:
1 pound beef tenderloin steaks, cut into 4 medallions
salt and pepper to taste
1 tbsp olive oil
1 cup mushrooms
2 tsp butter
1 cup sliced or diced sweet and/or hot peppers
4 cloves crushed garlic
1/2 cup white wine
1 cup finely chopped, peeled and seeded tomato (aka concasse)
pinch of hot chili flakes
1 tsp balsamic vinegar
1/4 tsp dried oregano
2 tbsp chopped fresh oregano
toasted bread and mozzarella, optional

Pink Ice Ice Icing Its Good Friday

Its not often I can work a Vanilla Ice song into a video recipe, but here it fit like a pair of baggy pants.

This quick and simple lemon icing recipe is what I fro
sted my Easter bread with, and it works nicely as an all-purpose glaze for all types of cookies, breads, and pastries.

You remember that comedian, the one with the big porn-stache, that did the, "you might be a redneck if" routine?

By the way, if you were at one of his shows, you were a redneck. This recipe reminds me of that bit. You could come up with a whole list of "you might be a bad cook if…" statements, but one of them for sure would be, "you might be a bad cook if you buy icing."

There cant be an easier recipe than a simple sugar icing. Can you stir? Good, then you have what it takes. Im assuming if you do buy your icing, its because you simply dont know the recipe, or just assumed (like everyone at a Jeff Foxworthy show is a redneck) it was too complicated. Its not. Enjoy!

Lana Del Rey is just about to become a super effing HYUAGE star and she doesnt even have a single released yet. Im bringing her to you just before that happens, so you (like me) can be one of those annoying douchebags that says "Oh yeah, Ive been listening to Lana Del Rey since before she was big..." and pretty much lose 85% of your dignity. Its totally worth it though, because her songs are To.Die.For. In fact, thats a theme in some of her songs (Kill, Kill; Kinda Outta Luck), but you wont pick up on it right away because her seductive, and sometimes baby, voice wont let you.

Like many "fresh out the oven" artists before her, Lana is under quite a bit of scrutiny from various assholes who still live with their moms in their upper-middle class homes, wear ball-cupping tight jeans, drink PBR from a can, and talk about anything mainstream with the same disdain one might talk about the crimes against humanity Hitler committed hipsters for her evolution from cutesy,struggling performer, domain investors daughter Lizzy Grant (her real name) to every mans bombshell fantasy, lip-enhanced, "sadcore" recording artist Lana, to which I say "GET A JOB!!!!" I mean, seriously, how much time do these people have on their hands that they can spend their day scrounging up grainy pictures from 5 years ago, analyzing the whole "did she/didnt she" debacle of her mouth parts, when in reality, we all know theyre jerking it to her picture??? I promiiiiiiiiiiiiise you, the world needs good health sanitation employees. Think of it as a fundraiser for getting yourself wasted and annoying more people with your pro-con list about whether you should get bangs.

Yes, she probably did get her lips enhanced, but who the fuck cares? If we judged an artists merits solely on the basis of whether theyve altered their appearance, wed have...Weird Al Yankovich. Thats it. Weird fucking Al. Is that what you hipsters want??? White dudes with bad afros singing parody songs? Well thats just fine, you can have them. I, on the other hand, prefer the likes of Lana, who is beautiful enough to get me interested and talented enough to keep me around for a long time.
